OLD HONG KONG LEGEND MICHELIN STUDDED GRAND OPENING CELEBRATION MAESTRO’S MENU – MEDIA TASTING

Old Hong Kong Legend at Raffles City Singapore presents an Epic Michelin Studded Maestro’s Menu as part of its official Grand Opening celebration. For the first time ever in Singapore, Michelin Chef Ng Sui Hong (吴瑞康) from HangZhou and Old Hong Kong’s Executive Chef Yau Chin Ping (邱展评) have paired up to create unique sophisticated  Hangzhou specialty and contemporary Hong Kong Cantonese creations at Old Hong Kong Legend for food connoisseurs in Singapore during the Epic 3-Day Michelin Affair from 11th to 13th April.

Hangzhou cuisine is the representative of Zhejiang Cuisine, one of China’s eight cuisines where specialty dishes are known for their freshness, tenderness, softness and smoothness. Michelin Chef Ng is the owner and highly acclaimed head chef of Hong Kong’s renowned Hangzhou Restaurant, where his restaurant has received numerous international accolades, including being featured in the top-rated “Michelin Guide for Hong Kong and Macau” for 2009 and 2010.

Award winning Michelin Chef Ng, whose regular customers include Donald Tsang, Chief Executive of the Hong Kong Special Administrative Region of the People's Republic of China, Louise Chia (Jin Yong), famous martial arts novelist and celebrities Carina Lau, Vivian Chow, Sylvia Chang, Kenny Bee,  will introduce his Michelin stars Hangzhou cuisine to Singapore at Old Hong Kong Legend. Hangzhou Restaurant is famously known for its Braised Pork Belly and handmade Grass Carp fishballs, and diners will have the opportunity to try these specialty dishes available only with the Maestros' Menu prepared for the 3-Day Michelin Affair at Old Hong Kong Legend.

Chef Yau is the Executive Chef at Old Hong Kong Legend with over 32 years of Chinese Culinary experience having helmed restaurants all over Southeast Asia, including Michelin-rated Sun Tung Lok Restaurant in Hong Kong. His wealth of expertise further augments Old Hong Kong’s reputation for serving only the finest Cantonese cuisine where dishes are prepared using delicate cooking methods .

Lobster in Pumpkin Egg Yolk Sauce 流沙南天龙虾球 – Too pretty to savor ! Love the sweetness of the fresh lobster meat.

Sui Hong Signature Braised Pork Belly 瑞康极品东坡肉 – Michelin Chef Ng braised it to perfection. The Pork belly melt in your mouth sensation with subtle aroma from the spices combined with the hand made dough is simply divine!

Hangzhou Fried Noodles and Brasenia Fishballs 金雕玉器(配)蓴菜鱼圓. Freshly made Brasenia Fish balls simmered in clear double boiled chicken soup paired with fried noodles is another winning dish from Michelin Chef Ng. The softness and freshness of the springy fish ball is amazing and goes extremely well with the soup.

Glutinous Rice Balls in Osmanthus Brandy and Black Sesame Paste Pancake 仙露明珠(配)黑芝麻锅饼. I have a weakness for Osmanthus desserts and the soft chewy glutinous rice balls with Osmanthus Brandy is out of the world ! This taste exactly like the authentic Hong Kong Desserts served in Hong Kong Fine Dining Chinese Restaurants. The black sesame paste pancake is crispy on the outside and not too sweet for my palette.
